In windows platform go to:
-The control pannel=>Performance and Maintenance=>System
-On My computer right clic=>properties
Go to the advanced tab and choose environment variables.
In Linux: add "export MODELSIM=PATH_YOU_WANT" in the /etc/profile file.

perhaps I have to refine my question:
I am trying to simulate a opb-slave using modelsim, therefore I need to
"generate simulation hdl files" in edk. where can I set the environment
vars of MODELSIM so that the wizard can do his work?
